Homemade 7 Cheese Mac–N–Cheese 
I think if there is one universal dish that most kids (2-100) like, it is macaroni and cheese. Servings: 4-6 (depending on appetite)
What you’ll need:
- 8 oz Macaroni – elbows, bow-ties, whatever your kids like
- 2-3 quart pot
- 2 cups of Cheese – I buy one of the blends depending on the taste you’re going after
- Six Italian Blend
- Small mixing bowl
- 1 egg
- 2 Tbs Milk
OPTIONAL FOR BAKING INTO CASSEROLE:
- 2 Tbs Butter
- 1/2 cup Sharp Cheddar grated
- One casserole baking dish (Pyrex, Corning, etc.)
- Paprika to garnish
What you will do:
- Prepare noodles according to box and drain
- Keep noodles covered between steps to keep them hot
- Stir in butter and cover
- In a separate small bowl – mix egg and milk
- Add two large Tbs of the hot noodles (you are doing this to bring the egg mixture to noodle temperature and prevent curdling of milk)
- Mix egg mixture into noodles
- Add grated cheese and stir
You can serve at this point or continue to bake preparation:
- Set oven for 350F degrees
- Pour Macaroni and Cheese into casserole dish
- Sprinkle Sharp Cheddar grated cheese across top
- Bake 15 minutes or until cheese starts to brown slightly (you do not want burnt cheese)
- Sprinkle with Paprika and serve
This can be changed around with lots of Cheddar, milder cheeses, adding franks, onions, etc. Experiment and ENJOY!
